IRISH SODA BREAD STUFFING

Description: This is a delicious and hearty stuffing made with traditional Irish soda bread, onions, celery, and herbs.

Preparation time: Approximately 15 minutes.

Cooking time: 1 hour.

Serving size:  8-10 servings.

Ingredients:

  • 1 lb Irish soda bread, cubed
  • 4 tbsp butter
  • 1 large onion, chopped
  • 2 stalks celery, chopped
  • 2 cloves garlic, minced
  • 2 tsp dried sage
  • 2 tsp dried thyme
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 2 cups chicken or vegetable broth
  • 2 eggs, beaten

Instructions:

  1. Preheat oven to 350°F.
  2. Melt butter in a large skillet over medium heat. Add onion, celery, and garlic and sauté until softened, about 5 minutes.
  3. In a large bowl, combine the cubed Irish soda bread, onion mixture, sage, thyme, salt, and pepper.
  4. Pour in the broth and stir until bread is moistened.
  5. Add beaten eggs and stir until well combined.
  6. Transfer mixture to a greased 9×13 inch baking dish and bake for 45-60 minutes, or until golden brown on top and heated through.
