Ingredients:
- 1 lb Irish soda bread, cubed
- 4 tbsp butter
- 1 large onion, chopped
- 2 stalks celery, chopped
- 2 cloves garlic, minced
- 2 tsp dried sage
- 2 tsp dried thyme
- 1/2 tsp salt
- 1/2 tsp black pepper
- 2 cups chicken or vegetable broth
- 2 eggs, beaten
Instructions:
- Preheat oven to 350°F.
- Melt butter in a large skillet over medium heat. Add onion, celery, and garlic and sauté until softened, about 5 minutes.
- In a large bowl, combine the cubed Irish soda bread, onion mixture, sage, thyme, salt, and pepper.
- Pour in the broth and stir until bread is moistened.
- Add beaten eggs and stir until well combined.
- Transfer mixture to a greased 9×13 inch baking dish and bake for 45-60 minutes, or until golden brown on top and heated through.
