- 1/2 cup raisins or currants (optional)
- 3/4 cup buttermilk
- 1 teaspoon vanilla extract
- 1 large egg, beaten (for egg wash)
- Demerara sugar (for sprinkling)
Instructions:
- Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- Add the cold cubed butter to the flour mixture. Use a pastry cutter or your fingers to cut the butter into the dry ingredients until the mixture resembles coarse crumbs.
- If using raisins or currants, stir them into the flour mixture.
- In a separate bowl, whisk together the buttermilk and vanilla extract.
- Make a well in the center of the flour mixture and pour in the buttermilk mixture. Stir until just combined. Be careful not to overmix; the dough should be slightly sticky.
