IRISH SODA BREAD SCONES

Description: Irish Soda Bread Scones are a delightful twist on traditional Irish soda bread. These scones are tender, slightly sweet, and have a dense yet crumbly texture. They are perfect for a cozy breakfast or served with a cup of tea.

Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 4 tablespoons unsalted butter, cold and cubed
  • 1/2 cup raisins or currants (optional)
  • 3/4 cup buttermilk
  • 1 teaspoon vanilla extract
  • 1 large egg, beaten (for egg wash)
  • Demerara sugar (for sprinkling)

 

Instructions:

  1. Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. Add the cold cubed butter to the flour mixture. Use a pastry cutter or your fingers to cut the butter into the dry ingredients until the mixture resembles coarse crumbs.
  4. If using raisins or currants, stir them into the flour mixture.
  5. In a separate bowl, whisk together the buttermilk and vanilla extract.
  6. Make a well in the center of the flour mixture and pour in the buttermilk mixture. Stir until just combined. Be careful not to overmix; the dough should be slightly sticky.
  7. Turn the dough out onto a lightly floured surface and gently knead it a few times to bring it together.
  8. Pat the dough into a circle about 1-inch thick. Using a sharp knife or a biscuit cutter, cut the dough into scones.
  9. Place the scones onto the prepared baking sheet. Brush the tops with beaten egg and sprinkle with Demerara sugar for added sweetness and crunch.
  10. Bake for about 20 minutes or until the scones are golden brown and cooked through.
  11. Remove from the oven and let them cool on a wire rack for a few minutes. Serve warm or at room temperature.
