IRISH SODA BREAD MUFFINS

Description: Irish Soda Bread Muffins are a delicious variation of traditional Irish soda bread. These muffins are dense, slightly sweet, and have a wonderful crumbly texture. They are quick and easy to make, requiring minimal preparation and baking time.

Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, chilled and cut into small pieces
  • 1 cup buttermilk
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup raisins (optional)

 

Instructions:

  1. Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease with cooking spray.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. Add the chilled butter to the dry ingredients. Using a pastry cutter or your fingers, cut the butter into the flour mixture until it resembles coarse crumbs.
  4. In a separate bowl, whisk together the buttermilk, egg, and vanilla extract.
  5. Make a well in the center of the dry ingredients and pour in the buttermilk mixture. Stir until just combined. If using raisins, fold them into the batter.
  6. Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.
  7. Bake in the preheated oven for 20-25 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.
  8. Remove the muffins from the oven and allow them to cool in the tin for 5 minutes. Then transfer them to a wire rack to cool completely.
  9. Serve the Irish Soda Bread Muffins warm or at room temperature. They are delicious on their own or spread with butter or jam.
