Ingredients
- 2 cups all-purpose flour
- 1/4 cup granulated sugar
- 1 teaspoon baking powder

- 1/2 cup unsalted butter, chilled and cut into small pieces
- 1 cup buttermilk
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup raisins (optional)
Instructions:
- Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease with cooking spray.
- In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- Add the chilled butter to the dry ingredients. Using a pastry cutter or your fingers, cut the butter into the flour mixture until it resembles coarse crumbs.
- In a separate bowl, whisk together the buttermilk, egg, and vanilla extract.
- Make a well in the center of the dry ingredients and pour in the buttermilk mixture. Stir until just combined. If using raisins, fold them into the batter.
- Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.
