IRISH SCONES

Description: Irish scones are a type of quick bread that are popular in Ireland and other parts of the world. They are typically served with butter, jam, or clotted cream, and can be enjoyed for breakfast, brunch, or as a snack.

Ingredients:

  • 2 cups all-purpose flour
  • 1/4 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup cold unsalted butter, cut into small pieces
  • 1/2 cup milk
  • 1 large egg, lightly beaten

Instructions:

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. Using a pastry blender or your fingers, cut the butter into the flour mixture until it resembles coarse crumbs.
  4. In a separate bowl, whisk together the milk and egg. Add this mixture to the flour mixture and stir until just combined.
  5. Turn the dough out onto a lightly floured surface and knead gently until it comes together in a smooth ball.
  6. Pat the dough into a circle that is approximately 1 inch thick. Use a floured biscuit cutter or the rim of a drinking glass to cut out rounds of dough.
  7. Place the scones on the prepared baking sheet and brush the tops with a little extra milk or egg wash.
  8. Bake for 15-20 minutes, or until the scones are lightly golden brown and cooked through.
  9. Serve warm with butter, jam, or clotted cream. Enjoy!
