IRISH RATATOUILLE

Description: Irish Ratatouille puts an Irish twist on the classic Provençal vegetable stew by incorporating hearty Irish vegetables alongside traditional ingredients, resulting in a comforting and flavorful dish.

Serving Size: 4-6 servings


Ingredients:

  • 2 large potatoes, diced
  • 1 small cabbage, chopped
  • 2 leeks, sliced
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 bell peppers, diced (any color)
  • 2 zucchinis, diced
  • 4 tomatoes, diced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish (optional)


Instructions:

  1. In a large pot, heat the olive oil over medium heat. Add the diced potatoes, cabbage, and leeks. Cook, stirring occasionally, for about 5 minutes until slightly softened.
  2. Add the diced onion and minced garlic to the pot. Cook for another 3-4 minutes until the onion is translucent.
  3. Stir in the diced bell peppers, zucchinis, and tomatoes. Season with dried thyme, salt, and pepper. Cover the pot and let the ratatouille simmer for 20-25 minutes, stirring occasionally, until all the vegetables are tender.
  4. Taste and adjust seasoning if needed. Garnish with chopped fresh parsley if desired.
  5. Serve hot with crusty Irish soda bread for a complete meal.
