- 6 medium-sized potatoes, peeled and cubed
- 1 large onion, chopped
- 2 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp dried thyme
- 1 tsp dried sage
- Salt and pepper, to taste
- 1/2 cup breadcrumbs
- 1/4 cup melted butter
- Preheat your oven to 350°F (175°C).
- In a large pot, boil the cubed potatoes in salted water until they are soft and easily mashed. Drain the water and mash the potatoes until they are smooth.
- In a separate pan, sauté the chopped onions and minced garlic in olive oil until they are soft and translucent.
- Add the sautéed onions and garlic to the mashed potatoes, along with the dried thyme, dried sage, salt, and pepper. Mix everything together until it is well combined.
- Grease a baking dish with some melted butter. Spoon the potato mixture into the dish, smoothing it out into an even layer.
- Top the potato mixture with breadcrumbs, then drizzle the melted butter on top.
- Bake the potato stuffing in the preheated oven for 25-30 minutes, or until the top is golden brown and crispy.
- Serve hot as a side dish with your favorite meats or vegetables.
