- 4 medium-sized potatoes, peeled and diced
- 1 onion, diced
- 3 cloves of garlic, minced
- 4 cups of chicken or vegetable broth
- 1 cup of heavy cream
- 2 tablespoons of butter
- Salt and pepper, to taste
- Optional toppings: grated cheddar cheese, chopped green onions, crumbled bacon
- In a large pot, melt the butter over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
- Add the diced potatoes and broth to the pot. Bring the mixture to a boil, then reduce the heat and let it simmer until the potatoes are tender, about 15-20 minutes.
- Using an immersion blender or transferring the soup to a blender, puree the soup until smooth.
- Add the heavy cream to the pot and stir to combine. Cook for another 5-10 minutes until heated through.
- Season with salt and pepper to taste. Serve hot with optional toppings if desired.
