IRISH POTATO SALAD

Description: Irish Potato Salad offers a creamy, tangy twist on the classic, featuring tender potatoes tossed with scallions, parsley, and a tangy mayo-mustard dressing. Ingredients:

  • 1 kg (2 lbs) baby potatoes, scrubbed
  • 4 scallions, finely chopped
  • 2 tbsp fresh parsley, chopped
  • 150g (1/2 cup) mayonnaise
  • 1 tbsp wholegrain mustard
  • 1 tbsp apple cider vinegar
  • Salt and pepper to taste


Instructions:

  1. Boil the potatoes in salted water for 15-20 minutes until fork-tender. Drain and let cool slightly before cutting into bite-sized pieces.
  2. In a large bowl, mix the mayonnaise, mustard, apple cider vinegar, salt, and pepper.
  3. Add the scallions, parsley, and potatoes to the dressing, tossing to coat evenly.
  4. Serve immediately or refrigerate for an hour to let the flavors develop.
