IRISH POTATO PANCAKES

Description: Also known as โ€œboxty,โ€ these potato pancakes are a classic Irish dish made with grated potatoes, flour, and milk. Theyโ€™re crispy on the outside and soft on the inside, making them a great addition to any meal.

Cooking time: 20 minutes

Serving size: Size: 4-6

    Ingredients:

    • 2 cups grated potatoes
    • 1/2 cup flour
    • 1/2 cup milk
    • 1 egg
    • 1/4 cup chopped scallions (optional)
    • Salt and pepper to taste
    • Butter for frying

    Instructions:

    1. Combine the grated potatoes, flour, milk, egg, scallions (if using), salt, and pepper in a large mixing bowl.
    2. Mix well until a thick batter forms.
    3. Heat a large skillet over medium heat and melt a tablespoon of butter in it.
    4. Spoon about 1/4 cup of batter onto the skillet for each pancake.
    5. Cook for 3-4 minutes on each side until golden brown.
    6. Serve hot with butter, sour cream, or applesauce.
