- 2 leeks, white and light green parts only, cleaned and thinly sliced
- 4 medium-sized potatoes, peeled and diced
- 4 cups vegetable or chicken broth
- 1 cup milk or heavy cream
- Salt and pepper to taste
- Fresh chives or parsley for garnish (optional)
Instructions:
- In a large pot, melt the butter over medium heat. Add the leeks and sauté for 5 minutes until they soften.
- Add the diced potatoes and broth to the pot. Bring to a boil, then reduce the heat and simmer for about 20 minutes or until the potatoes are tender.
- Using an immersion blender or regular blender, puree the soup until smooth and creamy.
- Return the soup to the pot and stir in the milk or heavy cream. Season with salt and pepper to taste.
- Simmer the soup for another 5 minutes to heat through.
- Serve hot, garnished with fresh chives or parsley if desired.
