IRISH POTATO LEEK SOUP

Description: A classic Irish soup made with potatoes, leeks, and flavorful herbs. It’s creamy, comforting, and perfect for chilly days.

Ingredients:

  • 2 tablespoons butter
  • 2 leeks, white and light green parts only, cleaned and thinly sliced
  • 4 medium-sized potatoes, peeled and diced
  • 4 cups vegetable or chicken broth
  • 1 cup milk or heavy cream
  • Salt and pepper to taste
  • Fresh chives or parsley for garnish (optional)

Instructions:

  1. In a large pot, melt the butter over medium heat. Add the leeks and sauté for 5 minutes until they soften.
  2. Add the diced potatoes and broth to the pot. Bring to a boil, then reduce the heat and simmer for about 20 minutes or until the potatoes are tender.
  3. Using an immersion blender or regular blender, puree the soup until smooth and creamy.
  4. Return the soup to the pot and stir in the milk or heavy cream. Season with salt and pepper to taste.
  5. Simmer the soup for another 5 minutes to heat through.
  6. Serve hot, garnished with fresh chives or parsley if desired.
