IRISH OAT CAKES

Description: A crispy, savory biscuit made with oats and often served with cheese or butter.

Preparation time: 10-15 minutes

Cooking time: 30-40 minutes

Serving size: 10-12 cakes

  • 1 cup medium oatmeal
  • 1/2 cup all-purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp baking soda
  • 1/4 cup unsalted butter, softened
  • 1/4 cup brown sugar
  • 1 large egg
  • 2 tbsp buttermilk
  • 1 tbsp milk
  1. Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.
  2. In a medium bowl, whisk together the oatmeal, flour, baking powder, salt, and baking soda.
  3. In a large bowl, beat the butter and brown sugar together until creamy. Add the egg and beat until well combined.
  4. Stir in the buttermilk and milk.
  5. Add the dry ingredients to the butter mixture and mix until just combined.
  6. Roll the dough into 12 balls and place them onto the prepared baking sheet.
  7. Flatten each ball into a disk, about 1/4 inch (0.6 cm) thick.
  8. Bake the Irish Oat Cakes for 15 to 20 minutes, or until golden brown.
  9. Let the oat cakes cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  10. Serve with butter, cheese, or honey or whatever gets your taste buds going!!
