- 1 cup medium oatmeal
- 1/2 cup all-purpose flour
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1/4 tsp baking soda
- 1/4 cup unsalted butter, softened
- 1/4 cup brown sugar
- 1 large egg
- 2 tbsp buttermilk
- 1 tbsp milk
- Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.
- In a medium bowl, whisk together the oatmeal, flour, baking powder, salt, and baking soda.
- In a large bowl, beat the butter and brown sugar together until creamy. Add the egg and beat until well combined.
- Stir in the buttermilk and milk.
- Add the dry ingredients to the butter mixture and mix until just combined.
- Roll the dough into 12 balls and place them onto the prepared baking sheet.
- Flatten each ball into a disk, about 1/4 inch (0.6 cm) thick.
- Bake the Irish Oat Cakes for 15 to 20 minutes, or until golden brown.
- Let the oat cakes cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
- Serve with butter, cheese, or honey or whatever gets your taste buds going!!
