IRISH LEMON PUDDING

Ingredients

  • 4 large eggs, separated
  • 1 cup granulated sugar
  • Zest of 2 lemons
  • Juice of 2 lemons
  • 4 tablespoons all-purpose flour
  • 1 cup milk
  • Powdered sugar, for dusting

 

Instructions:

  1. Preheat the oven to 350°F (175°C). Grease a 9-inch baking dish or individual ramekins.
  2. In a large bowl, whisk together the egg yolks and sugar until well combined.
  3. Add the lemon zest, lemon juice, flour, and milk to the egg yolk mixture. Whisk until smooth and well incorporated.
  4. In a separate bowl, beat the egg whites until stiff peaks form.
  5. Gently fold the beaten egg whites into the lemon mixture until no white streaks remain.
  6. Pour the mixture into the greased baking dish or divide it among individual ramekins.
  7. Place the baking dish or ramekins in a larger baking pan filled halfway with hot water (water bath).
  8. Bake for 40 minutes or until the top is golden and the pudding is set.
  9. Remove from the oven and let it cool for a few minutes. The pudding will slightly deflate as it cools.
  10. Dust with powdered sugar before serving. Serve warm or chilled.
