IRISH LEMON POSSET

Description: Irish lemon posset is a traditional and elegant dessert, similar to the classic lemon posset but with a rich Irish twist. This version incorporates a touch of Irish cream liqueur, adding depth and a hint of warmth to the citrusy, creamy delight. The result is a smooth and luxurious dessert, perfect for special occasions or as a comforting treat.

Ingredients:

  • 600ml double cream (heavy cream)
  • 150g caster sugar
  • 2 large lemons (juice and zest)
  • 2 tbsp Irish cream liqueur (optional)


Instructions:

1. Heat the Cream:
• In a saucepan, combine the double cream and caster sugar. Heat gently over medium heat, stirring occasionally until the sugar has completely dissolved.
• Bring the mixture to a gentle boil, then reduce the heat and simmer for 3 minutes, stirring continuously to avoid scorching.

2. Add Lemon and Irish Cream:
• Remove the saucepan from the heat and stir in the lemon juice, lemon zest, and Irish cream liqueur (if using). The mixture will begin to thicken as the acidity from the lemon reacts with the cream.
• Let the mixture cool slightly before pouring it into individual serving glasses or ramekins.

3. Chill:
• Cover the glasses with cling film and refrigerate for at least 4 hours, or until set. The posset will have a smooth, velvety texture when ready.

4. Serve:
• Serve the Irish lemon posset chilled, garnished with a twist of lemon zest, a drizzle of Irish cream, or a few fresh berries for an extra touch.
