IRISH CREAM CHEESECAKE

Description: This is a rich and creamy cheesecake with a hint of Irish cream liqueur and a chocolate cookie crust.

Preparation time: Approximately 30 minutes.

Cooking time: 1 hour.

Serving size: ย 12 servings.

    Ingredients:

    • 1 1/2 cups chocolate cookie crumbs
    • 1/4 cup unsalted butter, melted
    • 3 (8 oz) packages cream cheese, softened
    • 1 cup sugar
    • 3 eggs
    • 1/2 cup Irish cream liqueur
    • 1 tsp vanilla extract
    • Whipped cream, for serving

    Instructions:

    1. Preheat oven to 325ยฐF.
    2. Combine chocolate cookie crumbs and melted butter in a bowl and press into the bottom of a 9-inch springform pan.
    3. In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, beating well after each addition.
    4. Stir in Irish cream liqueur and vanilla extract.
    5. Pour mixture into prepared crust and bake for 55-60 minutes, or until center is set.
    6. Cool completely before slicing and serving with whipped cream.
