IRISH COFFEE CAKE

Description: A delicious cake with the flavors of Irish coffee, often topped with a sweet icing or glaze.

Preparation time: 15-20 minutes

Cooking time: 40-50 minutes

Serving size: 8-10 slices

  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, at room temperature
  • 2 eggs
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 cup strong coffee
  • 1/2 cup Irish whiskey
  • 1 tablespoon brown sugar
  • 1 teaspoon ground cinnamon
  1. Preheat your oven to 350°F. Grease a 9-inch round cake pan and set it aside.
  2. In a large mixing bowl, cream together the sugar and butter until light and fluffy.
  3. Add the eggs one at a time, beating well after each addition.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the butter mixture, alternating with the coffee, until everything is well combined.
  6. Pour the batter into the prepared cake pan and smooth the top with a spatula.
  7. In a small bowl, mix together the whiskey, brown sugar, and cinnamon. Drizzle this mixture over the top of the cake batter.
  8. Bake the cake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the cake cool for 10 minutes in the pan, then transfer it to a wire rack to cool completely.
