IRISH CHICKEN AND MUSHROOM PIE

Description: Irish Chicken and Mushroom Pie is a hearty and comforting dish that combines tender chunks of chicken and earthy mushrooms in a rich and creamy sauce. Encased in a flaky pastry crust, it’s the ultimate comfort food for any occasion.

Ingredients:

For the Filling:

  • 2 tablespoons of olive oil
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 2 boneless, skinless chicken breasts, diced
  • 200g (7 oz) mushrooms, sliced
  • 2 tablespoons of all-purpose flour
  • 250ml (1 cup) chicken broth
  • 125ml (1/2 cup) heavy cream
  • Salt and pepper to taste
  • 2 tablespoons of fresh parsley, chopped

For the Pastry:

  • 1 sheet of store-bought puff pastry
  • 1 egg, beaten (for egg wash)

 

Instructions:

  1. Heat the olive oil in a large skillet over medium-high heat. Add the chopped onion and cook until translucent, about 3-4 minutes. Add the minced garlic and cook for an additional 30 seconds.
  2. Add the diced chicken to the skillet and cook until it’s no longer pink, about 5 minutes. Remove the chicken from the skillet and set it aside.
  3. In the same skillet, add the sliced mushrooms and cook until they release their moisture and turn golden brown, about 5-7 minutes.
  4. Sprinkle the flour over the mushrooms and stir to coat them evenly. Cook for 1-2 minutes to remove the raw taste of the flour.
  5. Gradually add the chicken broth and heavy cream to the skillet, stirring constantly until the sauce thickens. Season with salt and pepper to taste.
  6. Return the cooked chicken to the skillet and add chopped parsley. Stir everything together and simmer for 5-7 minutes until the chicken is heated through.
  7. Preheat your oven to 200°C (400°F).
  8. Transfer the chicken and mushroom mixture into a pie dish.
  9. Roll out the puff pastry sheet and place it over the pie dish, trimming any excess pastry. Brush the pastry with the beaten egg.
  10. Bake in the preheated oven for about 20-25 minutes, or until the pastry is golden brown and puffed up.
