IRISH CHEDDAR AND BACON SCONES

Ingredients:

  • 225g (1 ¾ cups) all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 60g (1/4 cup) cold unsalted butter, cubed
  • 150g (1 1/4 cups) grated Irish cheddar cheese
  • 4 slices bacon, cooked and crumbled
  • 120ml (1/2 cup) milk
  • 1 large egg
  • 2 tbsp chopped chives (optional)
  • 1 egg, beaten (for brushing)


Instructions:

  1. Preheat the oven to 200°C (400°F) and line a baking tray with parchment paper.
  2. In a large bowl, combine the flour, baking powder, and salt.
  3. Cut in the cold butter using your fingers or a pastry cutter until the mixture resembles coarse crumbs.
  4. Stir in the grated cheddar, crumbled bacon, and chives (if using).
  5. In a separate bowl, whisk together the milk and egg, then pour it into the dry ingredients. Stir until the dough just comes together.
  6. Turn the dough out onto a floured surface and gently knead a few times. Flatten it into a disc about 2.5 cm (1 inch) thick, then cut into 8 wedges.
  7. Place the scones on the prepared baking tray and brush the tops with the beaten egg.
  8. Bake for 18-20 minutes, or until golden brown.
  9. Let the scones cool slightly before serving.
