IRISH BREAKFAST OMELETTE

Description: A hearty omelette inspired by the traditional Irish breakfast, packed with bacon, sausage, mushrooms, and tomatoes. Perfect for a filling start to the day.

Ingredients:

  • 3 large eggs
  • 1 tbsp butter
  • 2 rashers of Irish bacon, diced
  • 1 small sausage, cooked and sliced
  • 1/4 cup diced cooked mushrooms
  • 1/4 cup diced tomatoes
  • Salt and pepper to taste


Instructions:

  1. Beat the eggs in a bowl and season with salt and pepper.
  2. Heat the butter in a pan over medium heat.
  3. Add the diced bacon, sausage, mushrooms, and tomatoes. Cook until the bacon is crispy and the vegetables are softened.
  4. Pour the eggs over the mixture, letting them cook until they start to set.
  5. Fold the omelette in half and cook until fully set.
  6. Serve hot with a slice of soda bread or a few slices of black pudding on the side.
