- 250g (about 9 oz) Irish black pudding, casing removed
- 1 egg, beaten (for egg wash)

Instructions:
- Preheat your oven to 200°C (390°F) and line a baking tray with parchment paper.
- Roll out the puff pastry sheet on a lightly floured surface into a rectangle about 30cm x 20cm (12 inches x 8 inches).
- Cut the black pudding into 12 equal-sized pieces, each about the length of the shorter side of the puff pastry rectangle.
- Place a piece of black pudding along one edge of the puff pastry rectangle, leaving a border of about 1cm (0.4 inches) along the edge.
- Roll up the pastry tightly, enclosing the black pudding, and seal the edge by pressing down lightly.
- Cut the rolled pastry into 12 equal-sized pieces and place them seam-side down on the prepared baking tray.
- Brush the tops of the sausage rolls with the beaten egg, then sprinkle with sesame seeds or poppy seeds if desired.
- Bake in the preheated oven for 20-25 minutes, or until the pastry is golden brown and crisp, and the black pudding is cooked through.
- Remove from the oven and allow to cool slightly before serving.
