Preparation Time: 15 minutes

Cooking Time: 30 minutes

Serving Size: 4 servings

Ingredients:

  • 1 lb (450g) beef sirloin or tenderloin, thinly sliced
  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 8 oz (225g) mushrooms, sliced
  • 2 tablespoons all-purpose flour
  • 1 cup beef broth
  • 1/2 cup Irish stout (such as Guinness)
  • 1 tablespoon Worcestershire sauce
  • 1/2 cup sour cream
  • Salt and black pepper, to taste
  • Fresh parsley, chopped, for garnish
  • Cooked mashed potatoes or buttered noodles, for serving

Instructions:

  • Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the sliced beef in batches and cook until browned on all sides. Transfer the cooked beef to a plate and set aside.
  • In the same skillet, add the remaining tablespoon of olive oil. Add the chopped onion and cook until softened, about 3-4 minutes. Add the minced garlic and sliced mushrooms, and cook until the mushrooms are golden brown and tender, about 5-6 minutes.
  • Sprinkle the flour over the mushrooms and stir to combine. Cook for 1-2 minutes to cook off the raw flour taste.
  • Gradually pour in the beef broth and Irish stout, stirring constantly to prevent lumps from forming. Bring the mixture to a simmer and cook until the sauce has thickened slightly, about 5-7 minutes.
  • Stir in the Worcestershire sauce and return the cooked beef to the skillet. Cook for an additional 2-3 minutes, or until the beef is heated through and the sauce has thickened to your desired consistency.
  • Remove the skillet from the heat and stir in the sour cream until well combined. Season with salt and black pepper, to taste.
  • Serve the Irish Beef Stroganoff hot over a bed of cooked mashed potatoes or buttered noodles. Garnish with chopped fresh parsley and enjoy the comforting flavors of Ireland in every bite!
