- 300g plain flour
- 150g cold butter, diced
- 1 egg yolk

- 1 medium potato, diced
- 2 garlic cloves, minced
- 1 tbsp Worcestershire sauce
- 1 tsp dried thyme

- 1 tsp ground black pepper
- 1 tsp sal
- 2 tbsp tomato paste
- 150ml beef stock
- 1 egg, beaten (for glazing)
Instructions:
1. Make the Pastry:
• In a large bowl, mix the flour and salt. Add the diced butter and rub it into the flour with your fingertips until the mixture resembles coarse breadcrumbs.
• Add the egg yolk and enough cold water to bring the dough together. Shape into a ball, wrap in cling film, and refrigerate for at least 30 minutes.
2. Prepare the Filling:
• Heat a little oil in a large pan over medium heat. Add the minced beef and cook until browned. Remove from the pan and set aside.
• In the same pan, add the onion, carrot, and potato. Cook for about 5-7 minutes until the vegetables are softened.
• Stir in the garlic, Worcestershire sauce, thyme, rosemary, pepper, and salt. Add the tomato paste and mix well.
• Return the beef to the pan and pour in the beef stock. Simmer for 10-15 minutes, until the mixture thickens and the vegetables are tender. Remove from heat and let cool.
3. Assemble the Hand Pies:
• Preheat the oven to 200°C (180°C fan) or 400°F.
