IRISH APPLE CAKE

Description: Irish Apple Cake is a delightful dessert that combines the wholesome flavors of apples with a moist, spiced cake. Ingredients:

For the Cake:

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk
  • 2 large apples, peeled, cored, and chopped

 

For the Topping:

  • 2 tablespoons granulated sugar
  • 1/2 teaspoon ground cinnamon

 

Instructions:

1. Prepare the Oven: Preheat your oven to 350°F (175°C) and grease a round 9-inch cake pan.

2. Sift Dry Ingredients: In a bowl, sift together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Set this dry mixture aside.

3. Cream the Butter and Sugar: In a separate large bowl, cream together the softened butter and sugar until the mixture becomes light and fluffy.

4. Add Eggs and Vanilla: Beat in the eggs, one at a time, and stir in the vanilla extract.

5. Mix Dry Ingredients: Gradually mix the dry ingredients into the wet mixture. Alternate with buttermilk and mix until well combined.

6. Add Apples: Gently fold in the chopped apples.

7. Prepare Topping: In a small bowl, combine the sugar and cinnamon for the topping.

8. Assemble the Cake: Pour half of the cake batter into the greased pan. Sprinkle half of the topping mixture over it. Add the remaining batter and top with the rest of the topping.

9. Bake: Bake for approximately 40 minutes or until a toothpick inserted into the center comes out clean.

10. Serve: Allow the cake to cool in the pan for a few minutes, then transfer it to a wire rack to cool completely. Slice and enjoy your Irish Apple Cake!
