- 4 large baking potatoes
- 200g (about 7 oz) Dubliner cheese, grated

- Salt and pepper, to taste
Instructions:
- Preheat your oven to 200°C (400°F). Scrub the potatoes clean and pat them dry with paper towels.
- Prick the potatoes all over with a fork, then place them directly on the oven rack and bake for 1 hour or until they are tender when pierced with a fork.
- Remove the potatoes from the oven and let them cool slightly until they are safe to handle.
- Cut each potato in half lengthwise, then scoop out the flesh, leaving about ¼ inch of potato attached to the skin. Reserve the potato flesh for another use.
- Place the potato skins on a baking sheet lined with parchment paper, skin side down.
- Sprinkle grated Dubliner cheese evenly inside each potato skin, then top with the crumbled bacon.
- Return the potato skins to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
