Ingredients

  • 2 lbs (1 kg) fresh mussels, cleaned and debearded
  • 2 tbsp butter

  • 1 cup (240 ml) Irish hard cider
  • 1/2 cup (120 ml) chicken stock or fish stock
  • 2 tbsp fresh parsley, chopped
  • 1 tsp fresh thyme leaves
  • Salt and freshly ground black pepper, to taste
  • Lemon wedges, for serving
  • Crusty bread, to serve

Instructions

  1. In a large pot or Dutch oven, melt the butter over medium heat. Add the garlic and shallot and sauté for 2–3 minutes until fragrant.
  2. Pour in the Irish cider and chicken stock. Bring the mixture to a simmer.
  3. Add the cleaned mussels, then cover the pot with a lid. Steam for 5–7 minutes, shaking the pot occasionally, until the mussels open.
  4. Discard any mussels that remain closed. Stir in the parsley, thyme, and season with salt and pepper.
  5. Serve the mussels in bowls with plenty of broth, garnished with lemon wedges and slices of crusty bread for dipping.
