CORNED BEEF AND CABBAGE QUESADILLA

Ingredients

  • ยผ cup cooked corned beef, shredded or chopped
  • ยผ cup cabbage, thinly sliced
  • ยผ cup shredded Swiss cheese
  • 1 large flour tortilla
  • 1 tbsp butter or oil
  • ยผ tsp caraway seeds (optional, for extra flavor)
  • ยผ tsp black pepper
  • ยฝ tbsp Dijon mustard (optional, for extra tang)


Instructions

  1. Sautรฉ the Cabbage: Heat butter or oil in a skillet over medium heat. Add the cabbage, caraway seeds (if using), and black pepper. Sautรฉ for 3โ€“5 minutes until the cabbage is soft and slightly caramelized. Remove from heat.
  2. Assemble the Quesadilla: Spread Dijon mustard over half of the tortilla (if using). Evenly layer the corned beef, sautรฉed cabbage, and Swiss cheese over the mustard. Fold the tortilla in half to form a semicircle.
  3. Cook the Quesadilla: Heat a clean skillet over medium heat. Place the folded quesadilla in the skillet and cook for 2โ€“3 minutes per side, pressing gently, until golden brown and the cheese is melted.
  4. Serve: Remove from heat, let cool for a minute, then slice into wedges and enjoy!
