CHOCOLATE GUINNESS CAKE

Description: A chocolate cake made with Guinness beer and topped with a cream cheese frosting.

Preparation time: Approximately 20 minutes.

Cooking time: Approximately 35-40 minutes.

Serving size: This recipe makes a 9-inch round cake that can serve 8-10 people.

 

  • 1 cup Guinness or other stout beer
  • 1 cup unsalted butter, cubed
  • 3/4 cup unsweetened cocoa powder
  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 1 1/2 teaspoons baking soda
  • 3/4 teaspoon salt
  • 2 large eggs
  • 2/3 cup sour cream
  • 1 teaspoon vanilla extract

For the frosting:

  • 8 ounces cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 4 cups confectioners’ sugar
  • 1/4 cup heavy cream
  • 1 teaspoon vanilla extract
  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a medium saucepan, heat the Guinness and butter over medium heat until the butter has melted.
  3. Add the cocoa powder and whisk until the mixture is smooth. Remove from the heat and let cool.
  4. In a large mixing bowl, whisk together the flour, sugar, baking soda, and salt.
  5. In a separate bowl, whisk together the eggs, sour cream, and vanilla extract.
  6. Add the cooled Guinness mixture to the egg mixture and whisk until combined.
  7. Gradually add the wet ingredients to the dry ingredients and whisk until the batter is smooth.
  8. Pour the batter into the prepared cake pans and bake for 35-40 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
  9. Remove the cakes from the oven and let them cool in the pans for 10 minutes before removing them from the pans and letting them cool completely on wire racks.
  10. To make the frosting, beat the cream cheese and butter together until light and fluffy.
  11. Gradually add the confectioners’ sugar, mixing well after each addition.
  12. Add the heavy cream and vanilla extract and beat until the frosting is smooth and creamy.
  13. Place one cake layer on a serving plate and spread a layer of frosting on top.
  14. Place the second cake layer on top and spread frosting on top and around the sides of the cake.
  15. Granish with some shredded chocolate
  16. Refrigerate the cake for at least 30 minutes before serving to allow the frosting to set.
