- 1 cup Guinness or other stout beer
- 1 cup unsalted butter, cubed
- 3/4 cup unsweetened cocoa powder
- 2 cups all-purpose flour
- 2 cups granulated sugar
- 1 1/2 teaspoons baking soda
- 3/4 teaspoon salt
- 2 large eggs
- 2/3 cup sour cream
- 1 teaspoon vanilla extract
For the frosting:
- 8 ounces cream cheese, softened
- 1/2 cup unsalted butter, softened
- 4 cups confectioners’ sugar
- 1/4 cup heavy cream
- 1 teaspoon vanilla extract
- Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a medium saucepan, heat the Guinness and butter over medium heat until the butter has melted.
- Add the cocoa powder and whisk until the mixture is smooth. Remove from the heat and let cool.
- In a large mixing bowl, whisk together the flour, sugar, baking soda, and salt.
- In a separate bowl, whisk together the eggs, sour cream, and vanilla extract.
- Add the cooled Guinness mixture to the egg mixture and whisk until combined.
- Gradually add the wet ingredients to the dry ingredients and whisk until the batter is smooth.
- Pour the batter into the prepared cake pans and bake for 35-40 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
- Remove the cakes from the oven and let them cool in the pans for 10 minutes before removing them from the pans and letting them cool completely on wire racks.
- To make the frosting, beat the cream cheese and butter together until light and fluffy.
- Gradually add the confectioners’ sugar, mixing well after each addition.
- Add the heavy cream and vanilla extract and beat until the frosting is smooth and creamy.
- Place one cake layer on a serving plate and spread a layer of frosting on top.
- Place the second cake layer on top and spread frosting on top and around the sides of the cake.
- Granish with some shredded chocolate
- Refrigerate the cake for at least 30 minutes before serving to allow the frosting to set.
