CAULIFLOWER AND CHEESE GRATIN

Ingredients:

  • 1 large head cauliflower, cut into florets
  • Salt and black pepper to taste
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1 ½ cups whole milk
  • 1 cup grated Irish cheddar cheese (plus extra for topping)
  • ½ cup grated Parmesan cheese
  • 1 tsp Dijon mustard
  • 1 pinch nutmeg (optional)
  • ¼ cup breadcrumbs (optional)


Instructions:

  1. Preheat Oven and Prepare Cauliflower:
    Preheat your oven to 375°F (190°C). Steam or blanch the cauliflower florets in salted water for about 5 minutes until slightly tender but still firm. Drain and set aside.
  2. Make the Cheese Sauce:
    In a saucepan, melt the butter over medium heat. Add the flour and whisk for 1-2 minutes to form a roux, ensuring it doesn’t brown. Gradually whisk in the milk, stirring constantly to avoid lumps, and cook until the sauce thickens (about 5 minutes).
  3. Add Cheese and Seasonings:
    Remove the sauce from heat, and stir in the Irish cheddar, Parmesan, Dijon mustard, salt, black pepper, and nutmeg, if using. Stir until the cheese is fully melted and the sauce is smooth.
  4. Assemble the Gratin:
    Place the cauliflower florets in a baking dish and pour the cheese sauce evenly over the top, gently mixing to coat all florets. Sprinkle extra cheese and breadcrumbs over the top for a crispy, golden finish.
  5. Bake:
    Bake for 20-25 minutes, or until the gratin is bubbly and the top is golden brown.
  6. Serve:
    Let the gratin cool slightly before serving. Enjoy as a side dish with roasted meats, or as a cozy vegetarian main.
