BUTTERED TURNIP WITH WHITE PEPPER

Description: Buttered turnip is a classic Irish side dish, valued for its simplicity and comforting flavour. Soft, mashed turnip enriched with butter and gently seasoned with white pepper has long accompanied roast meats and stews in Irish homes.

Ingredients

  • 900g turnip (swede), peeled and cubed
  • 50g butter
  • Salt, to taste
  • White pepper, to taste
  • Optional: splash of milk or cream

Instructions

Step 1 – Cook the Turnip

Place the cubed turnip in a pot of salted water. Bring to a boil and cook for 20–25 minutes until very tender.

Step 2 – Drain Well

Drain thoroughly and allow the turnip to steam dry for a minute or two to prevent excess water.

Step 3 – Mash with Butter

Mash the turnip until smooth. Add the butter and mash again until melted and well combined. Add a splash of milk or cream if a softer texture is desired.

Step 4 – Season

Season with salt and white pepper to taste, mixing well.

Step 5 – Serve

Serve hot as a side dish.

Tips

  • White pepper: Traditionally used instead of black pepper for a gentler heat.
  • Texture: Mash smooth or leave slightly chunky, depending on preference.
  • Extra richness: Add an extra knob of butter just before serving.
  • Traditional pairing: Excellent with bacon and cabbage, roast pork, or lamb.
