- 1 pound of potatoes, peeled
- 1/2 cup of all-purpose flour
- 1/2 teaspoon of baking powder
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 1 egg, beaten
- 1/4 cup of milk
- 2 tablespoons of butter, melted
- 1/4 cup of chopped scallions or onions (optional)
- Grate the potatoes into a bowl using a box grater or food processor with a grating attachment. Drain off any excess liquid from the grated potatoes.
- In a separate bowl, whisk together the flour, baking powder, salt, and black pepper.
- Add the beaten egg, milk, and melted butter to the dry ingredients, and whisk until smooth.
- Add the grated potatoes and chopped scallions or onions (if using) to the batter, and mix until well combined.
- Heat a large skillet or griddle over medium heat. Add a small amount of oil or butter to the pan to prevent sticking.
- Spoon the batter onto the skillet in 1/4 cup portions, and flatten slightly with the back of a spoon.
- Cook for 2-3 minutes on each side, or until golden brown and crispy.
- Serve hot with your favorite toppings, such as butter, sour cream, or applesauce.
