BEEF AND CABBAGE STEW

Ingredients:

  • 2 lbs (900g) stewing beef, cut into bite-sized chunks
  • 2 tbsp vegetable oil
  • 1 large onion, diced
  • 2 carrots, peeled and sliced
  • 2 parsnips, peeled and sliced
  • 4 cups (1 liter) beef stock
  • 1 cup (240ml) stout beer (optional, for depth of flavor)
  • 1 small head of cabbage, chopped
  • 2 medium potatoes, peeled and diced
  • 2 cloves garlic, minced
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp paprika
  • Salt and freshly ground black pepper, to taste
  • Fresh parsley, chopped (for garnish)



Instructions:

Prepare the Beef:

  • Season the beef chunks with salt and pepper.
  • Heat the oil in a large pot or Dutch oven over medium-high heat.
  • Sear the beef in batches until browned on all sides. Remove and set aside.


Sauté the Vegetables:

  • In the same pot, add the onion, carrots, and parsnips. Cook for 5–7 minutes, stirring occasionally, until softened.
  • Add the garlic and tomato paste, cooking for another minute.
  • Deglaze and Build the Broth:
  • Pour in the stout beer (if using) and scrape the bottom of the pot to release browned bits.
  • Add the beef stock, thyme, and paprika, stirring to combine.


Simmer the Stew:

  • Return the seared beef to the pot. Bring to a boil, then reduce the heat to low and cover. Simmer gently for 1.5 to 2 hours, stirring occasionally, until the beef is tender.
  • Add Cabbage and Potatoes:
  • Stir in the cabbage and potatoes. Continue to simmer for another 30–40 minutes, or until the potatoes are tender.


Adjust Seasoning:

  • Taste and adjust salt and pepper as needed.


Serve:

  • Ladle the stew into bowls, garnish with fresh parsley, and serve with crusty bread or soda bread.
