BAKED MONKFISH WITH IRISH HERB CRUST

Ingredients

  • 4 monkfish fillets
  • 2 tbsp olive oil
  • Salt and freshly ground black pepper, to taste
  • 1 cup fresh breadcrumbs
  • 2 tbsp fresh parsley, finely chopped
  • 1 tbsp fresh thyme leaves
  • 1 clove garlic, minced
  • Zest of 1 lemon
  • 2 tbsp melted butter
  • Lemon wedges, for serving

Instructions

  1. Preheat oven: Preheat to 400°F (200°C).
  2. Prepare fish: Place monkfish fillets in a lightly oiled baking dish. Season with salt and pepper.
  3. Make herb crust: In a bowl, combine breadcrumbs, parsley, thyme, garlic, lemon zest, and melted butter. Mix until evenly coated.
  4. Top fish: Press the herb mixture onto the top of each fillet.
  5. Bake: Bake for 20–25 minutes until the fish is cooked through and the crust is golden and crisp.
  6. Serve: Serve hot with lemon wedges.
