BACON AND CABBAGE PIE

  • 300g (10 oz) bacon or rashers, diced
  • 1 small green cabbage, shredded
  • 2 medium potatoes, peeled and diced

  • 1 cup (250ml) milk
  • 1 tsp Dijon mustard
  • Salt and pepper, to taste
  • 1 sheet of puff pastry
  • 1 egg, beaten (for glazing)


Instructions:

  1. Preheat Oven:
    Preheat your oven to 200°C (400°F).

  2. Cook the Potatoes:
    • Boil the diced potatoes in salted water until tender, about 10 minutes.
    • Drain and mash lightly, leaving some texture.

  3. Prepare the Bacon and Cabbage:
    • Heat a skillet over medium heat and cook the bacon until crispy. Remove and set aside.
    • Add the shredded cabbage to the same skillet and sauté in the bacon fat for 5-7 minutes until softened.

  4. Make the Sauce:
    • In a saucepan, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes to make a roux.
    • Gradually whisk in the milk until smooth and thickened.
    • Stir in the mustard, salt, and pepper.

  5. Combine the Filling:
    • In a large bowl, mix the bacon, cabbage, and potatoes. Pour the sauce over the mixture and stir to combine.

  6. Assemble the Pie:
    • Transfer the filling to a pie dish.
    • Roll out the puff pastry and place it over the dish, trimming any excess pastry.
    • Seal the edges and cut a small slit in the center for steam to escape.
    • Brush the pastry with beaten egg.

  7. Bake:
    Bake the pie in the preheated oven for 25-30 minutes, or until the pastry is golden and crisp.
