Ingredients:
- 1 cup pearl barley
- 2 cups water
- 2 apples, peeled, cored, and diced

- 1/4 cup raisins (optional)
- 1/2 cup milk
- 1 tbsp butter
Instructions:
- Rinse the barley under cold water. In a saucepan, bring the 2 cups of water to a boil, then add the barley. Reduce the heat and simmer for about 40-45 minutes, or until the barley is soft and most of the water has been absorbed. Drain any excess water.
- While the barley is cooking, peel, core, and dice the apples. Set aside.
- In a separate large pan, melt the butter over medium heat. Add the apples, cinnamon, nutmeg, and ginger. Cook for about 5-7 minutes, or until the apples are soft and starting to caramelize.
