APPLE BARLEY PUDDING

Description: Apple Barley Pudding is a comforting and hearty dessert made with barley, apples, and a blend of warm spices. This traditional dish combines the nutty flavor of barley with the sweetness of apples for a satisfying pudding that is perfect for fall or winter.

Ingredients:

  • 1 cup pearl barley
  • 2 cups water
  • 2 apples, peeled, cored, and diced
  • 1/2 cup brown sugar
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground ginger
  • 1/4 cup raisins (optional)
  • 1/2 cup milk
  • 1 tbsp butter

 

Instructions:

  1. Rinse the barley under cold water. In a saucepan, bring the 2 cups of water to a boil, then add the barley. Reduce the heat and simmer for about 40-45 minutes, or until the barley is soft and most of the water has been absorbed. Drain any excess water.
  2. While the barley is cooking, peel, core, and dice the apples. Set aside.
  3. In a separate large pan, melt the butter over medium heat. Add the apples, cinnamon, nutmeg, and ginger. Cook for about 5-7 minutes, or until the apples are soft and starting to caramelize.
  4. Add the cooked barley to the apples and stir in the raisins, brown sugar, and milk. Simmer on low heat for an additional 10-15 minutes, stirring occasionally, until the pudding thickens to your desired consistency.
  5. Serve warm. You can top it with a dollop of cream or a drizzle of honey for extra sweetness.
