APPLE AND RHUBARB CRUMBLE

Ingredients:

For the filling:

  • 4 medium apples, peeled, cored, and sliced
  • 3-4 stalks of rhubarb, chopped into 1-inch pieces
  • 75g (1/3 cup) granulated sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cinnamon (optional)


For the crumble topping:

  • 200g (1 1/2 cups) plain flour
  • 100g (1/2 cup) butter, cold and cubed
  • 75g (1/3 cup) granulated sugar
  • 50g (1/4 cup) rolled oats (optional, for extra crunch)


Instructions:

1. Prepare the filling:
Preheat your oven to 180°C (350°F). In a mixing bowl, combine the sliced apples and rhubarb. Add sugar, lemon juice, and cinnamon, if using. Toss everything together to coat the fruit evenly, and transfer the mixture to a greased 9-inch (23cm) pie dish or baking dish.

2. Make the crumble topping:
In a separate bowl, rub the cold butter into the flour using your fingertips until the mixture resembles coarse breadcrumbs. Stir in the sugar and oats, if using.

3. Assemble the crumble:
Scatter the crumble mixture evenly over the fruit, ensuring it covers the filling completely.

4. Bake:
Bake in the preheated oven for 40-45 minutes, or until the topping is golden brown and the fruit is bubbling.

5. Serve:
Let the crumble cool slightly before serving. It’s delicious on its own or served with a dollop of whipped cream or vanilla ice cream.
