Ingredients:

- 1 tablespoon baking powder

- 1/2 cup cold unsalted butter, cubed
- 1/2 cup milk
- 1 large egg
- 1 teaspoon vanilla extract
- 1 apple, peeled and diced (Granny Smith or Honeycrisp work well)
- Additional sugar and cinnamon for sprinkling (optional)
Instructions:
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, and salt.
- Add the cold butter and use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.
- In a small bowl, whisk together the milk, egg, and vanilla extract. Pour into the dry ingredients and stir until just combined.
- Gently fold in the diced apple.
- Turn the dough out onto a lightly floured surface and shape it into a round disc, about 1 inch thick. Cut into 8 wedges.
- Place the scones on the prepared baking sheet. If desired, sprinkle the tops with cinnamon sugar.
