OYSTER AND LEEK GRATIN

Ingredients

  • 18 fresh oysters, shucked

  • 1 cup whole milk
  • ½ cup heavy cream
  • ½ teaspoon sea salt
  • ¼ teaspoon black pepper
  • ½ cup fresh breadcrumbs
  • 2 tablespoons grated Irish cheddar cheese
  • 1 tablespoon chopped parsley

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Melt the butter in a saucepan over medium heat.
  3. Add the sliced leeks and cook gently for 8–10 minutes until softened.
  4. Sprinkle in the flour and stir for 1 minute.
  5. Gradually whisk in the milk and cream until smooth.
  6. Season with salt and pepper and simmer for 3–4 minutes until slightly thickened.
  7. Arrange the oysters in a buttered baking dish.
  8. Spoon the leek sauce evenly over the oysters.
  9. Combine the breadcrumbs, cheddar, and parsley in a small bowl.
  10. Sprinkle the breadcrumb mixture over the top.
  11. Bake for 15–18 minutes until golden brown and bubbling.
  12. Allow to rest for a few minutes before serving.
