ST. PATRICK’S DAY SPINACH & IRISH CHEDDAR SODA BREAD

Ingredients

  • 3 ½ cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 ½ cups buttermilk
  • 1 cup fresh spinach, finely chopped
  • 1 cup sharp Irish cheddar, grated
  • 2 tbsp butter, melted

Instructions

  1. Preheat oven: Preheat to 400°F (200°C). Line a baking sheet with parchment.
  2. Mix dry ingredients: In a large bowl, whisk flour, baking soda, and salt.
  3. Add fillings: Stir in chopped spinach and grated cheddar.
  4. Add liquids: Pour in buttermilk and melted butter. Mix gently until dough just comes together.
  5. Shape: Turn onto a floured surface, shape into a round loaf, and place on baking sheet.
  6. Score: Cut a deep cross in the top.
  7. Bake: Bake 35–40 minutes until golden and hollow-sounding when tapped.
  8. Cool: Allow to cool slightly before slicing.
