Ingredients

  • 8 lamb cutlets (loin or rib chops)
  • 1 tbsp olive oil
  • 1 tbsp Irish honey
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • ½ tsp smoked paprika
  • 1 clove garlic, minced
  • 1 tsp fresh thyme leaves
  • Salt and freshly ground black pepper

Instructions

  1. Season the lamb: Pat the cutlets dry. Rub with olive oil, garlic, cumin, coriander, smoked paprika, thyme, salt, and pepper. Let rest for 10 minutes.

  3. Glaze: During the final minute of cooking, drizzle honey over the cutlets and allow it to caramelize slightly.
