Ingredients
- 400g (2 cups) granulated sugar
- 125g (½ cup) butter
- 150ml (⅔ cup) evaporated milk
- 200g (7 oz) sweetened condensed milk
- 2 tbsp golden syrup (or light corn syrup)
- 1 tsp vanilla extract
- 2 tbsp dried dulse flakes (finely chopped)
- ½ tsp flaky sea salt (plus extra for sprinkling)
Instructions
Step 1 – Prepare the Pan
Line a 20cm (8-inch) square tin with parchment paper. Lightly butter the sides for easy release.
Step 2 – Cook the Fudge
In a heavy-bottomed saucepan, combine sugar, butter, evaporated milk, condensed milk, and golden syrup. Stir over low heat until the sugar dissolves and butter melts.
Step 3 – Bring to Temperature
Increase to medium heat and bring to a boil, stirring constantly. Cook until the mixture reaches 115°C (240°F) on a sugar thermometer (soft-ball stage).
Step 4 – Add Flavors
Remove from heat and stir in vanilla, dulse flakes, and sea salt. Beat vigorously with a wooden spoon for 5–7 minutes until the fudge thickens and loses some gloss.
Step 5 – Set and Cut
Pour into prepared tin, smooth the surface, and sprinkle with a little extra sea salt. Allow to cool completely, then refrigerate for 2 hours before cutting into squares.
