Ingredients:
- 2 tablespoons olive oil or vegan butter
- 2 large onions, thinly sliced
- 3 cloves garlic, minced
- 5–6 medium potatoes, peeled and sliced into thick rounds
- 3–4 vegan sausages (seared or lightly browned)
- 2 carrots, peeled and sliced
- 500ml (2 cups) vegetable broth
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- Salt and freshly ground black pepper, to taste
- Fresh parsley, for garnish (optional)
Instructions:
- Preheat the oven to 180°C (350°F).
- Heat the olive oil in a skillet over medium heat. Add the onions and cook slowly, stirring often, for about 15–20 minutes until golden and caramelized. Add garlic and cook for another minute.
- In a large casserole dish, layer half the potatoes, followed by half the onions, carrots, and vegan sausages. Season with thyme, parsley, salt, and pepper. Repeat the layers.
- Pour the vegetable broth evenly over the dish, cover with a lid or foil, and bake for 45 minutes.
- Uncover and bake for an additional 15 minutes, allowing the top to slightly crisp and brown.
- Garnish with chopped fresh parsley and serve hot.
Serving Suggestion:
