Barmbrack Pancakes – A Halloween Twist on Irish Fruit Bread

Barmbrack Pancakes are a festive breakfast inspired by Ireland’s traditional Halloween fruit bread. These pancakes combine the warm spices and tea-soaked fruit of classic barmbrack with the comfort of a hot griddlecake. Ideal for Halloween brunch or autumn mornings, they offer a unique and delicious way to celebrate Irish tradition with a twist.

Preparation and Cooking Details

  • Preparation Time: 35 minutes (including soaking time)
  • Cooking Time: 20 minutes
  • Serves: 4 people (makes approximately 8 pancakes)

Ingredients

  • 200g plain flour
  • 2 tsp baking powder
  • 1 tsp ground cinnamon
  • ½ tsp mixed spice
  • 2 tbsp brown sugar
  • 1 egg
  • 300ml whole milk
  • 1 tsp vanilla extract
  • 100g mixed dried fruit (sultanas, raisins, currants)
  • 100ml hot black tea (for soaking fruit)
  • Butter or oil for frying

Instructions

  1. Place the dried fruit in a bowl and pour over the hot tea. Let soak for 30 minutes, then drain and set aside.
  2. In a mixing bowl, combine the flour, baking powder, cinnamon, mixed spice, and brown sugar.
  3. In a separate bowl, beat the egg, then add the milk and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Fold in the soaked fruit.
  5. Heat a non-stick frying pan over medium heat and lightly grease with butter or oil.
  6. Spoon the batter onto the pan (roughly 2 tablespoons per pancake). Cook until bubbles appear on the surface, then flip and cook until golden on both sides.
  7. Repeat until all the batter is used. Serve warm with butter, syrup, or a dusting of icing sugar.
