Description: A delicious twist on the classic Irish dish, this quesadilla combines tender corned beef, sautéed cabbage, and melted Swiss cheese in a crispy tortilla for a flavorful, satisfying meal.

Preparation Time: 10 minutes
Cooking Time: 15 minutes
Servings: 1

Ingredients

  • ¼ cup cooked corned beef, shredded or chopped
  • ¼ cup cabbage, thinly sliced
  • ¼ cup shredded Swiss cheese
  • 1 large flour tortilla
  • 1 tbsp butter or oil
  • ¼ tsp caraway seeds (optional, for extra flavor)
  • ¼ tsp black pepper
  • ½ tbsp Dijon mustard (optional, for extra tang)

Instructions

  1. Sauté the Cabbage: Heat butter or oil in a skillet over medium heat. Add the cabbage, caraway seeds (if using), and black pepper. Sauté for 3–5 minutes until the cabbage is soft and slightly caramelized. Remove from heat.
  2. Assemble the Quesadilla: Spread Dijon mustard over half of the tortilla (if using). Evenly layer the corned beef, sautéed cabbage, and Swiss cheese over the mustard. Fold the tortilla in half to form a semicircle.
  3. Cook the Quesadilla: Heat a clean skillet over medium heat. Place the folded quesadilla in the skillet and cook for 2–3 minutes per side, pressing gently, until golden brown and the cheese is melted.
  4. Serve: Remove from heat, let cool for a minute, then slice into wedges and enjoy!
