Ingredients:
- 3 lbs (1.4 kg) unsmoked or smoked bacon joint (back bacon or collar)
- 1 large head of cabbage, cored and chopped
- 2 onions, peeled and quartered
- 4-5 carrots, peeled and chopped
- 8-10 whole black peppercorns
- 3-4 bay leaves
- 2 lbs (900g) potatoes, peeled and halved
- 2 tbsp butter (for serving)
- Fresh parsley (optional, for garnish)
Instructions:
Step 1: Cook the Bacon
- Place the bacon joint in a large pot and cover with cold water.
- Add the onions, bay leaves, and peppercorns.
- Bring to a boil, then reduce heat and simmer for about 1.5 to 2 hours, or until tender. Skim off any foam that forms on the surface.
Step 2: Cook the Vegetables
- Add the chopped carrots to the pot and cook for 15 minutes.
- Add the cabbage and simmer for another 10–15 minutes, until soft but not mushy.
- In a separate pot, boil the potatoes until fork-tender (about 20 minutes). Drain and toss with butter.
Step 3: Serve and Enjoy
- Remove the bacon from the pot and let it rest for a few minutes before slicing.
- Drain the vegetables and serve alongside the bacon.
- Garnish with fresh parsley and serve with mustard or a parsley sauce if desired.
