BOILED BACON AND CABBAGE

Description: Boiled Bacon and Cabbage is a classic Irish dish, known for its simple yet comforting flavors. Traditionally made with a joint of salted or smoked bacon, served alongside tender cabbage and buttery potatoes, this hearty meal is a staple in Irish households. Perfect for a family dinner, it embodies the warmth of home-cooked Irish cuisine.

Ingredients:

  • 3 lbs (1.4 kg) unsmoked or smoked bacon joint (back bacon or collar)
  • 1 large head of cabbage, cored and chopped
  • 2 onions, peeled and quartered
  • 4-5 carrots, peeled and chopped
  • 8-10 whole black peppercorns
  • 3-4 bay leaves
  • 2 lbs (900g) potatoes, peeled and halved
  • 2 tbsp butter (for serving)
  • Fresh parsley (optional, for garnish)


Instructions:

Step 1: Cook the Bacon

  1. Place the bacon joint in a large pot and cover with cold water.
  2. Add the onions, bay leaves, and peppercorns.
  3. Bring to a boil, then reduce heat and simmer for about 1.5 to 2 hours, or until tender. Skim off any foam that forms on the surface.


Step 2: Cook the Vegetables

  1. Add the chopped carrots to the pot and cook for 15 minutes.
  2. Add the cabbage and simmer for another 10–15 minutes, until soft but not mushy.
  3. In a separate pot, boil the potatoes until fork-tender (about 20 minutes). Drain and toss with butter.


Step 3: Serve and Enjoy

  1. Remove the bacon from the pot and let it rest for a few minutes before slicing.
  2. Drain the vegetables and serve alongside the bacon.
  3. Garnish with fresh parsley and serve with mustard or a parsley sauce if desired.
