Description: Though its origins lie in England, treacle tart has become a beloved addition to Irish baking traditions. This dessert combines golden syrup, fresh breadcrumbs, and a splash of lemon juice to create a sweet and tangy filling. Encased in buttery shortcrust pastry, treacle tart is a simple yet satisfying treat perfect for any occasion.

Ingredients:

For the Pastry:

  • 1 1/4 cups (160g) all-purpose flour
  • 1/2 cup (115g) cold unsalted butter, cubed
  • 2 tbsp sugar
  • 1 egg yolk
  • 2-3 tbsp cold water


For the Filling:

  • 1 cup (250ml) golden syrup
  • 1 cup (100g) fresh white breadcrumbs
  • Zest and juice of 1 lemon
  • 1 egg, beaten


Instructions:

Step 1: Make the Pastry

  1. In a bowl, combine the flour and sugar. Add the butter and rub it into the flour using your fingertips until the mixture resembles breadcrumbs.
  2. Stir in the egg yolk and 2 tablespoons of water. Mix until the dough comes together, adding a little more water if necessary.
  3. Shape the dough into a disc, wrap it in cling film, and refrigerate for at least 20 minutes.


Step 2: Prepare the Filling

  1. In a saucepan over low heat, gently warm the golden syrup until it becomes runny. Remove from heat.
  2. Stir in the breadcrumbs, lemon zest, and lemon juice. Allow the mixture to cool slightly, then stir in the beaten egg.


Step 3: Assemble the Tart

  1. Preheat your oven to 375°F (190°C).
  2. Roll out the chilled pastry on a floured surface to fit a 9-inch tart tin. Press the pastry into the tin, trimming any excess. Prick the base with a fork and line with parchment paper and baking weights.
  3. Blind bake the pastry for 10 minutes, then remove the weights and parchment and bake for another 5 minutes until lightly golden.


Step 4: Fill and Bake

  1. Pour the filling into the pre-baked pastry shell, spreading it evenly.
  2. Bake for 25 minutes, or until the filling is set and golden.


Serving Suggestion: Serve warm or at room temperature with clotted cream, a dollop of whipped cream, or a scoop of vanilla ice cream.
