- 1 lemon
- 4 cups water
- 4 cups granulated sugar

Wash the oranges and lemon thoroughly. Use a vegetable peeler or sharp knife to remove the zest from the oranges and lemon, trying to avoid the white pith. Slice the zest into thin strips. Peel off the remaining white pith from the fruit and discard. - Segment the Oranges and Lemon:
Cut the fruit into segments, removing any seeds. Chop the flesh into small pieces and add it, along with any juice, to a large pot. - Add Water and Cook:
Add the water and sliced zest to the pot. Bring to a boil over medium heat, then reduce to a simmer. Cook for about 45 minutes, until the zest softens and the liquid reduces by about half. - Add Sugar and Whiskey:
Add the sugar to the pot and stir until dissolved. Increase the heat to medium-high and let the mixture cook, stirring occasionally, for about 30-40 minutes or until it reaches a thick, jam-like consistency. Near the end, stir in the Irish whiskey. - Check for Doneness:
To test the marmalade, place a small spoonful on a chilled plate. If it gels slightly and wrinkles when pushed, it’s ready. If not, cook a few minutes longer and test again. - Jar and Cool:
