Ingredients:
- 4 lbs (1.8 kg) Limerick ham (smoked, unsliced, bone-in or boneless)
- 1.5 cups Irish cider (divided: 1/2 cup for the glaze, 1 cup for simmering and baking)
- 1 onion, quartered
- 1 large carrot, chopped
- 2-3 bay leaves
- 10-12 whole cloves
- 1/2 cup brown sugar
- 1/4 cup Irish mustard
- 1/2 cup breadcrumbs
Instructions:
- Optional Step – Soak the Ham: If the ham is very salty, soak it in cold water for 24 hours, changing the water once or twice.
- Simmer the Ham: Place the ham in a large pot, adding the onion, carrot, and bay leaves. Pour in 1/2 cup of the Irish cider along with enough water to cover the ham. Bring to a boil, then reduce the heat and let it simmer for about 1.5-2 hours (20 minutes per pound). Skim off any foam that rises to the surface.
- Prepare the Cider Glaze: While the ham cooks, preheat the oven to 375°F (190°C). In a bowl, combine the brown sugar, Irish mustard, breadcrumbs, and the remaining 1/2 cup of Irish cider to create a thick glaze.
- Glaze and Bake: Remove the ham from the pot and allow it to cool slightly. Score the fat on top in a diamond pattern, and place a clove in each diamond. Brush the cider glaze generously over the ham.
- Bake: Place the ham in a baking dish. Pour the remaining 1/2 cup of Irish cider around the ham to keep it moist while it bakes. Bake for 20-30 minutes, or until the glaze is golden and caramelized.
- Serve: Slice and serve the ham warm, with classic Irish sides like mashed potatoes, cabbage, or roasted vegetables.
