IRISH BEEF HAND PIES

Description: Irish beef hand pies are a savory and satisfying treat, perfect for a snack, lunch, or a portable meal. These hand pies are filled with a flavorful mixture of minced beef, onions, carrots, and potatoes, all wrapped in a flaky pastry. The filling is seasoned with traditional Irish herbs and spices, making each bite rich and comforting.

Preparation Time: 45 minutes (including chilling time for the pastry).

Cooking Time: 40 minutes (25 minutes for baking + 15 minutes for filling).

Serving Size: 10-12 hand pies.


Ingredients:

For the Pastry:

  • 300g plain flour
  • 150g cold butter, diced
  • 1 egg yolk
  • 3-4 tbsp cold waterPinch of salt

For the Filling:

  • 400g minced beef
  • 1 large onion, finely chopped
  • 1 large carrot, diced
  • 1 medium potato, diced
  • 2 garlic cloves, minced
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tsp ground black pepper
  • 1 tsp sal
  • 2 tbsp tomato paste
  • 150ml beef stock
  • 1 egg, beaten (for glazing)


Instructions:

1. Make the Pastry:
• In a large bowl, mix the flour and salt. Add the diced butter and rub it into the flour with your fingertips until the mixture resembles coarse breadcrumbs.
• Add the egg yolk and enough cold water to bring the dough together. Shape into a ball, wrap in cling film, and refrigerate for at least 30 minutes.


2. Prepare the Filling:
• Heat a little oil in a large pan over medium heat. Add the minced beef and cook until browned. Remove from the pan and set aside.
• In the same pan, add the onion, carrot, and potato. Cook for about 5-7 minutes until the vegetables are softened.
• Stir in the garlic, Worcestershire sauce, thyme, rosemary, pepper, and salt. Add the tomato paste and mix well.
• Return the beef to the pan and pour in the beef stock. Simmer for 10-15 minutes, until the mixture thickens and the vegetables are tender. Remove from heat and let cool.


3. Assemble the Hand Pies:
• Preheat the oven to 200°C (180°C fan) or 400°F.
• Roll out the pastry on a lightly floured surface to about 3mm thick. Cut out 10-12 circles (about 12cm/5 inches in diameter).
• Place a spoonful of the filling in the center of each circle. Fold the pastry over to create a half-moon shape and crimp the edges to seal.
• Place the pies on a baking sheet lined with parchment paper. Brush the tops with beaten egg and cut a small slit in each to allow steam to escape.


4.Bake:
• Bake for 20-25 minutes, until the pastry is golden and crisp.
• Let the pies cool slightly before serving.
