DUBLINER CHEESE AND TOMATO TART

Description: This delightful tart combines the tangy flavor of ripe tomatoes with the rich, nutty notes of Dubliner cheese, all nestled in a buttery, flaky pastry crust. Ideal for a light lunch, dinner, or even a savory brunch option, this tart is both elegant and satisfying.

Ingredients:

  • 1 pre-made pie crust (9-inch)
  • 1 1/2 cups shredded Dubliner cheese
  • 3-4 medium tomatoes, thinly sliced
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 2 tablespoons Dijon mustard
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Fresh basil leaves for garnish (optional)

 

Instructions:

1. Preheat the Oven:
Preheat your oven to 375°F (190°C).

2. Prepare the Pie Crust:
Place the pie crust in a 9-inch tart pan or pie dish, pressing it firmly against the bottom and sides. Trim any excess dough. Prick the bottom of the crust with a fork.

3. Blind Bake the Crust:
Line the crust with parchment paper or aluminum foil and fill with pie weights or dried beans. Bake in the preheated oven for about 10 minutes. Remove the weights and parchment, and bake for an additional 5 minutes until the crust is lightly golden. Remove from oven and set aside.

4. Prepare the Tomatoes:
Thinly slice the tomatoes and lay them on paper towels. Sprinkle lightly with salt and let them sit for about 10 minutes to draw out excess moisture. Pat dry with additional paper towels.

5. Assemble the Tart:
Spread the Dijon mustard evenly over the bottom of the pre-baked crust. Sprinkle the shredded Dubliner cheese over the mustard layer. Arrange the tomato slices over the cheese in a circular pattern, overlapping slightly.

6. Season and Top:
Drizzle the olive oil over the tomatoes. Sprinkle with grated Parmesan cheese, dried oregano, dried basil, salt, and pepper.

7. Bake:
Place the tart in the oven and bake for 25-30 minutes, or until the tomatoes are roasted and the cheese is bubbly and golden brown.

8. Cool and Serve:
Allow the tart to cool for about 10 minutes before slicing. Garnish with fresh basil leaves if desired.
