Preparation Time: 30 minutes

Cooking Time: 20 minutes

Serving Size: 4 servings

Ingredients:

  • 2 large Irish potatoes, peeled and diced
  • 1 cup Irish cheddar cheese, grated
  • 1 egg, lightly beaten
  • 1 1/2 cups all-purpose flour, plus extra for dusting
  • Salt and pepper to taste
  • 4 slices bacon, cooked until crispy, for garnish
  • Fresh parsley, chopped, for garnish

Whiskey Cream Sauce:

  • 1/4 cup Irish whiskey
  • 1 cup heavy cream
  • 2 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions:

  • Boil the diced Irish potatoes in a pot of salted water until tender, about 10-15 minutes. Drain well and mash until smooth.
  • In a large mixing bowl, combine the mashed potatoes, Irish cheddar cheese, beaten egg, flour, salt, and pepper. Mix until a soft dough forms.
  • Dust a clean surface with flour and transfer the dough onto it. Divide the dough into small portions and roll each portion into a long rope, about 1-inch thick.
  • Cut the ropes into 1-inch pieces and gently press each piece with a fork to create ridges.
  • Bring a large pot of salted water to a boil. Drop the gnocchi into the boiling water, a few pieces at a time, and cook until they float to the surface, about 2-3 minutes. Remove them with a slotted spoon and transfer to a plate.
  • In a skillet, melt the butter over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute. Pour in the Irish whiskey and let it simmer for another minute.
  • Slowly pour in the heavy cream, stirring continuously until the sauce thickens slightly. Season with salt and pepper to taste.
  • Add the cooked gnocchi to the skillet with the whiskey cream sauce and toss gently to coat.
  • Serve the Irish potato gnocchi hot, garnished with crispy bacon and chopped parsley. Enjoy this comforting and flavorful dish with your loved ones!
