Ingredients:

  • 4 cups mashed potatoes
  • 8 slices bacon, cooked until crispy and crumbled
  • 2 leeks, finely sliced
  • 1/2 cup butter
  • Salt and pepper to taste
  • 1 cup chicken or vegetable broth
  • Optional: 1/2 cup bread crumbs & 1/4 cup melted butter for topping
